Coconut Curry-Braised Chicken with Pol Roti Crumble and Spinach Mallung

Warm cinnamon, cardamom and cloves shine through creamy coconut curry. Ginger-garlic paste adds spicy depth. A hint of tamarind offers gentle tartness. Pol roti crumble introduces nutty coconut and wheat notes. Spinach mallung brings a fresh green bite. Flavours open with rich spice, transition to silky coconut, finish bright with lime and curry leaf oil. Intensity is balanced—bold yet approachable, layered without confusion.

Sri Lankan cuisine layers bold spices—cinnamon, cardamom, cloves, curry leaves—into rich coconut curries and vibrant sambols. Coastal influences bring seafood and tropical fruits; hill country offers fragrant teas and root vegetables. Meals balance heat, sweetness and tang: fiery chilli paste meets mellow coconut milk and bright lime. Textures vary from tender meats to crunchy fried shallots. Every dish tells a story of island life: sun, rain, spice gardens. You taste heritage in each bite and discover harmony between powerful flavours and fresh aromatics that leave you both comforted and invigorated.

Ingredients (Serves 4 GF)

  • 1.2 kg bone-in chicken thighs, skin on
  • 2 tbsp neutral oil
  • 1 large red onion, thinly sliced
  • 40 g ginger, grated
  • 30 g garlic, minced
  • 2 cinnamon sticks (5 cm each)
  • 4 green cardamom pods, lightly crushed
  • 4 cloves
  • 10 curry leaves
  • 400 ml coconut milk
  • 200 ml water, simmering
  • 1 tbsp tamarind paste
  • 1 tsp turmeric powder
  • Salt, to taste
  • 200 g baby spinach
  • 1 small red chilli, sliced (optional)
  • 2 limes, one for juice, one cut into wedges
  • Fresh coriander, for garnish

Pol Roti Crumble

  • 150 g wheat flour
  • 50 g grated fresh coconut
  • ¼ tsp salt
  • 1 tbsp sugar
  • 80 ml water (approx.)
  • 1 tbsp coconut oil

Curry Leaf Oil

  • 50 ml neutral oil
  • 10 curry leaves

Step-by-step Instructions

Step 1 – Mise En Place (15 minutes)
Slice onion, grate ginger, mince garlic. Crush spices. Separate spinach and chillies. Prepare bowls, heavy pot, frying pan, blender or mortar for mallung, microplane, serving platter. Organized prep keeps the braise and garnishes on time.

Step 2 – Make Pol Roti Crumble (15 minutes)
In a bowl, mix flour, shredded coconut, salt, sugar. Gradually add water to form a firm dough. Divide into two discs. Heat coconut oil in pan over medium. Cook each disc 2 minutes per side until golden. Cool then crumble into irregular pieces. Set aside.

Step 3 – Spinach Mallung (10 minutes)
In a dry pan over medium, briefly toast 1 tsp mustard seeds until they pop. Add garlic and chilli, stir 30 seconds. Add spinach and a pinch of salt, toss until just wilted (1–2 minutes). Remove and keep warm.

Step 4 – Braise Chicken (50 minutes)
Heat oil in heavy pot over medium. Brown chicken skin-side down (4 minutes), flip to brown other side (2 minutes). Remove. In same pot, add onion, ginger, garlic, cinnamon, cardamom, cloves and curry leaves. Sauté 3 minutes until onion softens. Add turmeric and tamarind; stir 1 minute. Return chicken; pour coconut milk and simmering water. Bring to gentle simmer, cover, reduce heat to low. Braise 35 minutes. Uncover, raise heat, reduce sauce 5–10 minutes until slightly thick. Season with salt and lime juice from one lime.

Step 5 – Curry Leaf Oil (5 minutes)
Warm oil in small pan until hot but not smoking. Add curry leaves, fry until crisp (15 seconds), strain into a bowl.

Step 6 – Plate and Garnish (5 minutes)
Spoon spinach mallung on one side of platter. Arrange chicken thighs beside it. Scatter pol roti crumble across chicken and sauce. Drizzle curry leaf oil over everything. Garnish with coriander, lime wedges and sliced chilli. Serve immediately.

Cooking Methods

• Slow Braising: Low and slow in coconut spiced liquid yields tender meat and infused sauce.
• Hand-Pressed Roti: Fresh coconut-wheat flatbread crisped then crumbled adds textural contrast.
• Quick Mallung: Flash wilt preserves spinach’s bright colour and fresh bite.

Optional Spice Blend

• 1 tsp Sri Lankan chilli powder, ½ tsp fennel seed powder, pinch of salt. Rub on chicken before browning for extra warmth.

Flavor Boosters

• A spoonful of black pepper sambol on the side for fiery punch.
• Toasted cashew bits scattered over pol roti crumble for extra crunch.

I built Comfort Spoon Co. on one idea: food can be coded with emotion. Each recipe is a system—rooted in Filipino memory, engineered for Melbourne kitchens, and designed to be scaled without losing soul. My background in consulting means the work isn’t just creative; it’s structured, repeatable, and commercially precise. Comfort Spoon Co. proves that nostalgia isn’t a story—it’s an operating model the food industry can use to build brands people feel before they taste.
